RESUMEN: El Liceo Centenario Ignaciano cuenta con un taller básico para la elaboración de alimentos, el taller es muy artesanal y cuenta con la maquinaria mínima necesaria; su problema actual es la falta de capital de trabajo, ya que no cuenta con los recursos suficientes para financiarse ni con el personal administrativo y técnico que lo pueda sacar adelante. A partir de éste estudio, se encontró que la reconversión puede ser viable y beneficiosa para las instituciones, la comunidad y el progreso de la ciudad; por otro lado, ésta microempresa tiene gran acogida dentro de los padres de familia de los estudiante de las entidades educativas y son ellos los que en principio serán sus clientes potenciales. El estudio también demostró que el producto es considerado de alto riesgo epidemiológico y de fácil contaminación, ésto hace, que para la microempresa, sea obligatorio cumplir con todos los aspectos de manipulación, cuidado, protección, construcción, diseño e higiene plasmados en el decreto 1345 del Ministerio de Salud. La mejor forma de constituir la microempresa es como un establecimiento de comercio, el cual dependa directamente de la fundación principal constituida por Asia Ignaciana y Fundación Loyola, permitiéndole, este tipo de estructura, obtener importantes beneficios tributarios. La capacitación es fundamental en éste tipo de empresa sobre todo con lo relacionado a proceso, higiene y manipulación de cárnicos, siendo las mejores opciones en éste aspecto Actuar Famiempresas y el Sena. Es recomendable que para la satisfactoria constitución de ésta microempresa, se determine un plan de acción con fechas claras y un presupuesto adecuado para cada actividad, es importante que el presente estudio se complemente con un estudio técnico que demuestre la demanda total a la cual puede tener acceso la microempresa para definir de esta forma que capacidad instalada se va a utilizar para poder disminuir los costos y satisfacer los crecimiento de demanda. Es importante que los datos de éste informe se actualicen permanentemente con el fin de obtener resultados más acertados.

ABSTRACT: The Liceo Centenario Ignaciano which is own by Asia Ignaciana and the Fundacion Loyola, currently has a basic food maker workshop, which has the minimum necessary machinery and needs a lot of hand made activities; It’s main issue is that it doesn’t has enough resources for self finance purposes nor with the appropriate administrative staff, capable of achieve some improvement, on the other hand this economics deficiency doesn’t allow to achieve its goal as an educational entity. With this research was found that the restructuring could be liable and full of benefits for the institution, the community and the city progress. On the other hand this micro business has a lot of acceptance within the student’s parents of the Liceo, because they are the potential clients of the project. The research also demonstrated that the product has been considerate as a epidemiologic high risk and easy to contaminate, this makes that the micro business needs to fulfill with all the aspects related to the handling, care, protection, construction, design and hygiene included in the 1345 regulatory article of the ministry of health. The best way to constitute the micro business is turning it into a commerce institution, which would depend directly from the main foundation constituted by Asia Ignaciana and Fundación Loyola, this kind of structure will allow the micro business to obtain tributary benefits. The training for the employees is fundamental for this kind of enterprise, specially the related with the hygiene process and the handling of the meat, the best options for the training are Actuar Famiempresa and el Sena. For the satisfactory constitution of this micro business is recommended to settle up an action plan with specific dates and an appropriate budget for each activity, to finish, is important to complement this report with a market research which will show the demand of the products of this micro business, with this market research would be possible to know the needs of the micro business so that the costs can be reduced and satisfy the increase on the demand. It is very important to keep this report up dated on every moment, this will improve de results.
